Localizado na parte traseira do boi, chamado popularmente de ossobuco, o Shank é
encontrado nas patas traseiras do boi. Devido ao uso frequente dessa área, ele é mais
seco e musculoso, o que exige um cozimento lento em um ambiente lento e úmido.
